I didn't notice any Rome-standard espresso there. Would not want to settle for good food and good wines?

All restaurants and cafés in France, not just in Gaillac and Albi, have espresso machines.
I have not heard of a restaurant named La Faise (a very common name) in either Gaillac or Albi. Would love to know more. Perhaps Yank knows?
What do you thin of the recommendations on these threads? Do none appeal to you?

Presumably you mean the La Falaise located in Cahuzac-sur-Vere. This is not far from Gaillac, probably about a 15 minute drive.
I haven't been for a while, but they're pretty good. they have or at least they used to have a Michelin star. Not deserved in my opinion, but a good restaurant in any case.

While in Cahuzac stop in at the little shop/ delicatessen on the right side of the road just a 100 yards before the restaurant. He has some pretty amazing stuff & a very good selection of local wine.
He'll sell you some good coffee as well!
