I got an email from SAVEUR with their recommended recipes of the week, I had just happened to purchase a jar of kimchee at ShopRite a couple of days ago....
I could have eaten the entire batch by myself....I served it with homemade refrigerator pickled cucumbers,,,,,and a cold beer.....
I had to pickup a bag of rice flour - which I had never cooked with before - so now I have a new ingredient to figure out how to use in other ways.....

That is what I made for lunch as well. 1 kimchee pancake and one shredded and broiled anchovy pancake. Added some fresh scallions for the crunch. Served with a side of seaweed salad.
Rice flour is great if you want to get a really crisp exterior to sauteed or fried foods.
p.s. Just looked at the Saveur recipe. My Korean cooking teacher makes much larger pancakes.... 1/3 to 1/2 cup of batter and then cuts them like a pie to serve family style. The pork is an interesting addition as well.
There is a whole bunch of different Jeon (Korean pancake) recipes that incorporate all sorts of ingredients so you should be able to use up your rice flour quickly.. I love the damn things.
