Chocolate-Free Fudge? How??

After a long time trying to figure out exactly what he is allergic to, finally an answer: chocolate! Sad, I know.

I have scoured the internet for chocolate-free fudge recipes...even those calling for pumpkin or peanut butter required some amount of white chocolate or chocolate. When I Google "chocolate-free fudge" I get results for dairy free, sugar free, etc. But not chocolate free! So I looked up the definition of "fudge", wondering if it includes the addition of chocolate, but nope...fudge is made by heating butter, sugar, and milk to a soft ball stage (kind of a soft caramel?) and adding other flavors. I sort of figured I could start playing around with those 3 ingredients, but I'm afraid that the texture won't be right. The biggest thing with fudge is its texture. It's not chewy but it's also not hard. I would probably end up making soft caramel candies instead of fudge.

Does anyone have any recipes for chocolate-free fudge or any advice on how to get started...like, ratios of milk, butter, and sugar to create the right texture/consistency?
