Silpancho at Sibarita, Arlington
Sometimes a really good meal has a way of making you feel all is right with the world. Especially if it costs under $15.
That's the case at Sibarita, a relatively new Bolivian joint in Arlington that specializes in Silpancho. They even have lamb silpancho!
Silpancho is a meat that has breadcrumbs pounded into it so that they become one. a good silpancho should be so thin it's translucent.
For the record it costs $13 with tax and features a large platter of rice and potatoes covered with silpancho and a side plate of chopped tomatoes with scallions and peppers.
