Cold fermented cabbage recipes?
I have some sauerkraut and kimchi in the fridge. I've no fear of using them in the winter, but no idea how to use them in the summer.

any other ideas? The husband is German, and cold sauerkraut preparations are unknown to him. I found a hint of a shredded apple and sauerkraut salad on chow which sounds amazing.

As for the sauerkraut, use it to top grilled sausages and hot dogs with mustard. And it's not cold, but a reuben with a salad or slaw on the side sounds very summery to me!
