Looking for restaurants serving traditional posole made of nixtamal, pork or chicken, hearty broth and chile. No canned hominy or home recipes, please.

The whole state. No joint too small.

Many will boo and hiss because it's vegetarian, but I like the posole at Richard's on Menaul in Albuquerque. To me it's more flavorful and well-prepared than a lot of the meaty ones I've tried at other restaurants. They soak it all night and start cooking it at the crack of dawn so it's ready by lunch, and they often sell out. I get red on the side and lime wedges. I like their non-sweet sopapillas, too.

Monroe's in Albuquerque for sure. Just had some today in fact. Yum!
