Herb Vinegar

I just made a bottle of herb vinegar (basil, garlic, rosemary & sage) and it smells so delicious. I usually just use it to put on sandwiches but I'd love to know of some other uses for it, any suggestions?

    Salad dressings, salsas & sauces, & to marinate poultry or seafood is what I use mine for. Also for stirring into extra-virgin olive oil for bread dipping.

      Ooh, using it as a marinade sounds like a great idea!

        Just keep in mind when marinating with vinegar (or citrus juices) that a little goes a long way. Just a few dashes along with some oil as a vehicle is all you need. Too much vinegar will "cook" the meat/fish via the acid in the vinegar & the texture will get soft/mushy.
