How does using powdered milk rather than regular milk impact the quality of english muffins?

Im curious as to why many english muffin recipes call for powdered milk and water as opposed to using liquid milk to begin with. A popular recipe is the Alton Brown recipe which calls for powdered milk. Im also thinking about using the English muffin recipe used in the Momofoku cookbook which uses buttermilk as opposed to powdered milk.
