I'm making a batch (Yield is 48 mini muffins or 12 regular muffins) of banana muffins. I want to make a cream cheese frosting (not too thick). How much frosting would be sufficient? 1 c?
That would come to one level teaspoon of frosting per mini-muffin. Are you comfortable with that amount? Personally, I'd double it, but that just might be me...
I'd make at least 2 cups, but not more than 4, depending on how many fingers are being dipped into the bowl...
