TJ'S PINEAPPLE>TERIYAKI SALAD
I just now made a vat of this for expected company. It uses Trader Joe's frozen pineapple, one of the few remaining food bargains. Cook two boneless skinless chicken breasts. When the meat is cool enough to handle, shred it and douse it VERY generously with soy sauce and garlic powder. Add a bag of TJ's frozen pineapple, some sliced scallions, a good handful of cashew nuts, and as much cooked butterfly or rotini pasta as you like (you want a pasta with a lot of surface to absorb the flavor). Toss in a little more soy sauce and garlic powder. Keeps all week in the refrigerator.
That sounds good. Here are some possible variations, too.
Use rice instead of the pasta.
Use full blown teriyaki sauce (soy sauce, sugar, minced garlic, shredded ginger, mirin and red pepper flakes) instead of the soy sauce and garlic powder.
Again, I think the salad with pineapple and cashew nuts sounds great.
