Looking for a vegetarian breakfast sausage recipe

I normally have 2 Morningstar soy breakfast sausage patties on top of a halved English muffin for breakfast once a week but they're nothing to get excited about. So im look for a recipe that I can freeze and store for a quick, healthy breakfast that I can have after my morning run.

      Has anyone made the Smoky maple sausages? I was curious if they froze well.

        Some time back my we tried to focus on adding more 'greens and beans' to our diet. Most mornings we created a bean 'sausage' patty consisting of mashed pinto beans, whole wheat bread crumbs, ground flax seed, Ener-G egg substitute, very finely diced onion, bell pepper, celery, garlic, salt, pepper and a dash of Italian sausage seasoning. The patty was served over sauteed spinach or other green with sliced tomato. It constantly evolved, depending on what we had on hand. I might even drizzle a sauce or dressing such as miso ginger or dijon vinaigrette.

          Let us know if you try it! I would guess that the cooking time would still be about the same if you shape them into patties instead of links.
