Icelandic veggie patty?
I just returned from Iceland. There was a dish that I ate a couple of times over there that I'm trying to find the name of/recipe for. I had an upscale version of it at Vox restaurant at the Hilton in Reykjavik, and a more modest version on a camping trip. It's a veggie patty/loaf that seems to be predominantly made of sweet potato. It also had sunflower seeds and pumpkins seeds in it. The version we had camping was made into big meatloaf size portions, then cooked wrapped in tinfoil. I was told it was "an Icelandic nut burger." Does anyone have any idea what this is? It was delicious and I'm hoping to recreate it at home.
