Financiers (oh, and watermelon martini, just for good measure)

Good morning! I didn't see any recent posts on Financiers when I searched for it, and just thought I'd drop a note on my virgin financiers baking of yesterday.

I used The Smitten Kitten's recipe, adapted from David Lebovitz (http://smittenkitchen.com/2007/10/gluten-free-chocolate-financiers/) and am pretty sure I have found my new signature dessert. (Well, at least for now, there are so many other things I have on my to-do list to try!) As an added bonus, they are gluten-free, too. I made the recipe as directed except I put them in my Grandmother's minature molds and after they cooled, I drizzled them with Disaronno to amp-up the almond flavor. For convenience sake, I used the 16 ounce sack of almond meal from Trader Joe's, which I think I can get 4 dry cups out of the bag.

Highly recommend this recipe!

And because it is summertime, I figured I should celebrate my first watermelon of the year by having a cocktail and used this recipe: http://theslowroasteditalian.blogspot... It was very refreshing.

But those financiers.... there are now 6 missing from the batch I made for my friend's birthday tomorrow. I'm guessing I need to make some more. I can't imagine who could have possibly eaten those scrumptious little pastries.....
