We'll be heading up to the area in September for the Sports Car Club of America's Runoffs. Staying in the Sheboygan area & looking for interesting (non chain) dinner recomendations.
Googling hasn't produced many options. There must be some hidden gems up there somewhere,

Lake Street Cafe in Elkhart Lake. It'll be packed on a race weekend, but it's worth the wait.

I have heard the Paddock Club next door is good too, but I've never been.

Margaux is still in Sheboygan and still absolutely fantastic, a true hidden gem. The menu specializes in small plates with global influences. Chef-owner Rob Hurrie is still working his culinary magic there. Looks like they're revamping their website at www.dinemargaux.com and I don't know what's up with that. Just go!

I've been to Lake Street Cafe and Paddock Club, and both are decent, but Margaux is consistently amazing. Also, you'll also find that on race weekends, you're better off at places in Sheboygan; the ones right in Elkhart itself get mobbed.

You can also go to the restaurants at the American Club, the high-end resort in Kohler. They're excellent, but pricey.

The following topic isn't all that recent - some of the places mentioned have closed, while others are still there - but it has a good overview and some detailed reports too:
