Currently living in New Zealand- went down to the fish boat today to buy some filets. The fishmonger was offering about 10 headless/tail-less fish bodies very cheap (I assume someone purchased the heads for a stock). He called them "cream fish" and with further internet investigation, I have found these are also called leatherjackets. They have no scales, but still have the dorsal fin. The need to be gutted still.
What the heck do I do with them now?? I thought it would be easy to find some recipe, but have not had much internet karma with this. Any suggestions?
