There seems to be a general consensus that Mala SIchuan Bistro is the best for that cuisine with the most authentic dishes, recipes and ingredients. I went just after they opened over a year ago and put them about third on my list after one visit but have since been back several times. One of the others is closed and the other, China Sichuan Cuisine on Gessner, has a much more limited menu of Sichuan specialties.

Here;s a somewhat dated thread on Cantonese that may help:

I can't help with your other requests - not enough experience.

For dim sum, my favorite is Fung's Kitchen on the SW Freeway near Fondren.

For congee, the only place I ever eat it is at Tan Tan on Westheimer near Voss. They have another (older) location at Bellaire and Ranchester. I eat their noodle soups as often as I can as well.
