Grill Pans

We would love to grill, however we are in a condo with an electric stove with a poor exhaust fan

Is there a good grill pan out there that can get the job done and make good steaks etc

My thought would be to get something that can go into the oven, and to get the heat high enough to sear i was thinking that I could put the oven on 500 degrees and then put the pan in there and let it sit in the head for around 30 minutes to absorb the heat then put that pan on the stovetop to cook with

Is that a good idea / bad idea and if so what kind of pan is going to work the best for that idea

    First, no pan will quiet perform the same as grilling on an open flame. I hope this is obvious. In term of using a pan to make great steaks. I would recommend a thick cast iron pan. It can store up a lot of thermal heat and deliver the heat in a short period of time. It is not the same as open flame, but it is just different, not worse.

    Won't it be easier and faster to just heat the pan up on stove? You can get it to a higher temperature too.

    Now, as for if you need a flat surface pan or a grilled marked pan, that is up to you.
