radish pickles

Making a quick pickled radish today, with salt/ginger/sugar/rice vinegar.

How do you like to pickle your radishes? I like the Mexican and Middle Eastern pickled radishes I've eaten in restaurants, and have found some older threads on those types of pickled radish.

Open to any ideas.

    prima I'm keen to see the responses to your post as I love radishes and can imagine how lovely they'd be pickled. I was looking for some inspiration in Eat Your Books recently but noticed many of the recipes were using Daikon radishes. Is that what you are thinking of as well? I have a weakness for regular red radishes and French radishes. When I see them at the farmer's markets I can't seem to resist them.

    This year I've been roasting them and loving the results.

      I've been using French breakfast radishes from my garden, so I substitute French Breakfast Radishes for any radishes called for in various recipes. The cutworms would destroy Daikon if I planted it.

      I like roasted radishes, too. Great to add a little white balsamic as they roast. I've also cooked them in a saucepan with a little butter, vinegar, sugar, water and pepper, which can be a little quicker if you're short on time.

        Oh I love your idea of the white balsamic with the roasted radishes prima, I'll most definitely give that a try. Thanks so much for sharing!!

          Here is the radish pickle I made today, cutting down a little on salt + sugar, using half apple cider vinegar and half seasoned rice vinegar, since the stores are closed and I don't have any unseasoned rice vinegar on hand. http://www.thewednesdaychef.com/the_w... Tasty. Liked it so much, I used some of the gingery radish pickle juice on leftover asparagus.

            prima thanks for sharing that recipe, I love rice vinegar and will most definitely make this recipe. I may sub garlic for the ginger since mr bc isn't a big fan of it. Great idea for re-purposing the remaining marinade, I think that would be lovely on any grilled veggies or even fish and seafood.
