Croaker -- can I grill it?

The croaker was very fresh at the fish market today, so I bought a couple and had them butterfly them for me. So they're whole, with the bones removed, except for the backbone.

This is really an experiment -- I've never had croaker before and I'm not sure what to expect regarding how it cooks and how it tastes, but I'd like to put it on the grill tonight. What should I do/not do to have a delicious meal? Thanks.

    we love love croaker. We usually buy them whole(gutted), salt, oil them and grill them. So so good. It's actually one of those fishes that are cheap and very very good in taste and texture.
    croakers are so much more expensive in Asia...

      make sure you oil your grill very well.

        Do it Japanese-style: salt heavily and refrigerate for a couple of hours. Before you put it on the grill, salt it again. Grill over fairly hot coals for a few minutes on each side (since they're butterflied already, maybe only a couple of minutes per side), and serve with rice, grated daikon radish, and some Japanese pickles. At least that's how we'd do it at the ricepad pad!
