Maryland Hounds with 7 Days in Rouen, Caen -- ideas?

Greetings hounds -- we will be spending most of a week in these fair cities and I'm interested in any suggestions from luxe to cheap and in between, plus markets, fromageries, patisseries, marchands des vins, etc.

We had a wonderful dinner at Gill in Rouen a year and a half ago. Did the 7 course tasting. Also enjoyed l'Espiguette.

Tour the Graindorge cheese factory in Livarot. Very smelly, and very good! Raw milk cheeses, not aged, unavailable in the US.

In Rouen I like the bistro l'Espiguette, in a very charming 'hood besides. Well-done Rouennais homecooking.

When in Bayeux, the absolute best restaurant in town for foodies is Le P'Tit Resto. Reservations essential. Not on the usual "lists", but extraordinary food prepared beautifully. DO NOT MISS!
