Ideas for stretching 1-1/2 lbs beef tenderloin
I've got a pound and a half of beef tenderloin. Any ideas on stretching this to feed 4 people?
Vietnamese Shaking beef or any type of stirfry should do the job. Stroganoff is also a terrific idea.
Slice into 4 six oz servings, grill mediaum rare.
Serve with grilled asparagus and roasted new potatoes.
Butterfly and stuff it. Grill or roast to desired done ness. Serve a cold soup as an app if it's hot where you are, or an heirloom tomato bisque. Soup will fill up your guests a bit so they aren't ravenous & looking for more food.

I'll probably go with Stroganoff because I think I have all the ingredients.
I'd love to grill it but it's end pieces left over from when I bought a whole tenderloin.
