Menu planning help -- what to serve with main dish veg soup
I'm serving a main dish veg soup for dinner tonight. It's pretty hearty -- it has chick peas and a whole host of veg in it. I'm making Mark Bittman's whole wheat flat bread to go with it. My question is -- what would round out the meal? I'd prefer something vegetarian, and protein heavy. I have small kids, so spicy would not work. It can be incongruous ethnicity-wise (e.g. I was thinking Chinese dumplings, but I"m not sure I can pull that off tonight).

Separately, I also love zucchini pancakes this time of year, which have protein in the eggs. If you use quinoa flour instead of all purpose, you get a bit more.
To me, a vegetable soup like that and bread IS a meal. But if you want more protein, cook up some soba (buckwheat) noodles and add them to the soup, perhaps cut into manageable pieces for the kids. Also, sauteed tofu in chunks will add protein to the soup.
I love one-bowl dishes. Salads as have been suggested are good ideas.
why not turn the flat bread into some kind of pizza? some cheese and caramelized onions maybe? a salad with peas, mint, almonds and feta? hard to say since we don't know really what is in your soup.
are eggs ok? deviled eggs on the side, or soft-bake some whole eggs on the flatbread with roasted veggies underneath.
