Help! Cooking James Oseland's Chicken Rendang

We just tasted the sauce, and it is extremely bitter. We can't figure out why, and the chicken hasn't been added yet. For those of you who have made this, did you have this experience, and what is the bitter component -- galangal, fresh turmeric or lemongrass?

    probably the turmeric....

      Eventually, the bitterness of the sauce seemed to mellow out, plus my husband did a lot of tinkering before he served it. It was delicious, but not, I think, something we will make again.

        I'm not a fan of the bitterness of lemongrass, so I either use it 1/2 strength or not at all, adding a touch of lemon juice instead. I've used fresh turmeric and never found it bitter.
