Malted Waffles

Should the malt in waffles like Carbon's Malted Waffles be nondiastatic? I assuming, yes because it is for the flavor.

Also, if you are making sourdough waffles, does diastatic malt do much? Doesn't the sourdough essentially do the same enzymatic action as DM ?

    Just a stab in the dark, but the sourdough is more for flavor, while the malt is more for texture.
