When we stayed at Encore! we walked across the street to Bouchon for breakfast; had something different each morning (three days) and everything was really good. Highly recommended.

Just finished a 3 night stay at the Wynn. Avoid Terrace Pointe Cafe, it's your standard, very overpriced resort breakfast. Possibly check out the Buffet if that's your sort of thing. The Country Club at the Wynn has a New Orleans inspired brunch that I haven't tried but enjoyed dinner there.
I'd go for Bouchon at Venetian, slight walk but well worth it - far less expensive than our other two breakfasts that were at the Wynn and far better as well.

Tableau at the Wynn if you want a non-buffet option because the buffet at Wynn is pretty good.
A short jaunt from the Wynn is Bouchon at the Venetian, which is another great option.

Tableau is just as good if not better than Bouchon. Eggs are fresher, great orange juice, and ten times better fries at Tableau. Bouchon has great chicken and waffles, pastries (swooning for apple or strawberry croissant), and boudin blanc are amazing. Both are great places either way.
