Small amount of lard - worth saving?

After making carnitas I am left w/ approx 1/4 c fat -- is it the basis for stockpiling more? Then what would you do w/ such a treasure?

    Definitely worth keeping. In addition to many other things, I use lard for greasing pans when baking bread. Great flavour in the final product.

      I agree with ipsedixit about cornbread or potatoes, but it's also heavenly (use a light hand) mixed with other steamed vegetables (especially green beans).

        Never throw away good lard.

        A little bit in cornbread, or even potatoes (mashed, roasted, baked, etc.) goes a long way.

          i save just about all rendered fat now. it lasts forever in the freezer. it never gets rock solid so it's easy just to smoosh off a piece.

            Cornbread--or a batch of homemade biscuits! 1/4 of a cup is plenty for that and they will come out tender and delicious.

              You mean instead of butter - or in addition to??

                One can use all lard, but with biscuits I generally prefer 50/50 ratio of shortening and lard.

                And now that I think about it, a bit lard in chocolate chip cookies is delightful.
