Cheesecake recipe(s) from old Bon Appetit
We recently made a move to Arizona and I lost my favorite cheesecake recipes. They were in an old Bon Appetit issue. Not sure exactly when; but probably early 2000's. The section was on recipes from famous restraunts around the country. It was about 3-5 pages long. I would like all of them if someone has the pages. However, the one I really HAVE to HAVE is the chocolate one. It was VERY dense and took a while to make. As I recall it used liqueurs; but the main difference was the fact that it was coated with a chocolate ganache which took the place of any kind of crushed cookie crust. The other one I really like was a caramel recipe. I can't remember the particulars; but I really liked it. For someone who chocolate is the only worthwhile dessert that's saying something. I have searched high and low on the web as well as emailed Bon Appetit with no luck. I ran across this sight and thought I would give it a try. Thx :)

If not they do have a dessert cookbook which Amazon carries which contains recipes for loads of cheesecakes...maybe you will find the one.

Unfortunately, no. I have tried this one and it is pretty good. The one I am looking for does not have a cookie crust. You turn the cake out on a plate with wax paper on it. Then you take a chocolate ganache and slowly pour it over the bottom and down the sides. It is thick and starts setting up pretty quick. Once it totally hardens you flip it onto a serving plate and remove the wax paper. What you end up with is a chocolate 'shell" rather than cookie crust. The pie also has cream de cacao and I think brandy which really intensivies the flavors!
