What can I do with leftover grilled vegetables?
My grilled vegetable ratatouille last night made boatloads. I don't normally save grilled zucchini or eggplant as it seems to get "weepy" but I have so much I thought it's worth a try. I grilled red onion, red pepper, eggplant, zucchini, and tomatoes. They are mixed and chopped in about 3/4" pieces. Any ideas?
I was thinking a grilled vegetable lasagna. Any ideas, links, recipes? Thanks

I regularly do wraps with leftover grilled or roasted vegetables. I use a little hummus on the wrap and add feta or goat cheese
But a few weeks ago I chopped them smaller, gave them a quick reheat and used them as the base (in place of english muffin) for eggs benedict. The combination of the runny poached egg and hollandaise over the roasted vegetables was fantastic. I used a small shallow ramekin to form the vegetables for presentation.

Ok I think you all have converted me! Never again will I throw out grilled veggies! I hope they will last until tomorrow. I didn't get a chance to eat them last night, and can't tonight either, but tomorrow I'm going to a play in the park and packing a picnic. I was thinking about tossing the grilled veggies with orzo and a dressing. Maybe adding some shrimp. I love all these ideas.

Whoa. The idea of not saving grilled veggies blows my mind. They're so great in so many things that I always grill or roast two or three times what I need for the meal just so I can have the leftovers.
Use in a quiche (or frittata or any egg dish, as has been mentioned)
Stir into a cream (or whatever) sauce and serve over pasta
Mix with shells (or cauliflower to keep it healthier!) and make a gratin (or just gratin them on their own)
Make a lemony vinaigrette and marinate them, then toss with quinoa
Use to stretch and add flavor to any meat filling (like for stuffed peppers, enchiladas, burritos, lettuce wraps, etc.) -

I have nothing more to add, except the above are some great suggestions......problem is we generally do not have any leftover grilled veggies.....all of the kids take them the next day to school or work!...I lie the idea of sandwhiches...., especially with goat cheese....thanks guys!

I made an awesome sandwich the other day out of roasted eggplant, peppers, onions, and sundried tomatoes. I cut an entire loaf of Italian bread, brushed on garlic olive oil, added the veggies, some goat cheese, fresh basil and drizzled it with balsamic glaze. I pressed the sandwich under bricks for a few hours and it was great.

My favorites are to mix the veggies into a shrimp scampi with pasta, or into a tortilla with a tomato and garlic chick pea spread (both roasted). Your favorite melted cheese is optional....
If the veggies are weepy, try weighing them down in a colander, especially if you're going to do the lasagna...boy, I thought I was hungry before this post! They also can be the basis for an excellent gazpacho, if you have the other ingredients on hand. Different, but the way I most prefer it now.
I think they are great in a pasta salad, with appropriate Italian meats and cheeses...enjoy!

oh yes, I say this! With goat cheese and balsamic... yum. I used to order a veg sandwich at this bar/restaurant in IL and it was roasted veggies, goat cheese, on ciabatta, but the best part were slices of crispy potatoes at the bottom of the sandwich. So delicious! So crispy, they had to have gone in to a deep fryer.
