and are they worth trying??
I tried them for the first time last month in an old-fashioned Spanish restaurant in Guatemala City. I was pleasantly surprised by the texture which I expected to be more like sweetbreads or brains but was more like tongue. I didn't particularly care for the preparation which was a very simple a la plancha. Didn't have a whole lot of flavor. Definitely worth trying, especially if you're in a place that's known for them. You might consider sharing it an an appetizer if you're with like-minded folk so you won't go hungry if you decide they're not for you for whatever reason.
