Nduja

Having gone to 1000 Tastes over the weekend, I found the best dish was the pasta from Vertical. They cooked it with Nduja sausage and asparagus. I'd like to replicate this dish at home. Where can I buy Nduja?

    I now have to wonder if it was really Nduja that Vertical used. I've read that it's more pasty in consistency while what Vertical was using seemed more like regular sausage meat.

        It can be spreadable if it is not cooked, resembling a paste (a very chunky paste). Putting it in a pasta dish may have cooked it slightly which would explain the sausage texture. Up to a certain point sausage an nduja are made using very similar processes.

        I believe specialty meat stores would have the Nduja you seek! Call Cumbrae's or Sanagan's. Cheese shops maaaay have (like Leslieville).

          Yeah, it was one of my favourites as well. They were making the pasta fresh on site. Not sure where you can get the same pasta in Toronto but I would check Alimento on King (give them a call) they have a pretty big selection of pastas there.
