Oops - overly-baked bacon

I baked about 12 oz of apple-cider cured bacon yesterday, and didn't check it soon enough. It is JUST shy of burnt. So I don't want to use it in anything that will cook it any further, like pasta carbonara. Aside from egg salad, chicken salad, deviled eggs, and crumbled on lettuce or spinach salads, any ideas? I think it's too far gone for BLT's - better something that uses only a rasher at a time. Also, it will crumble very easily.

    Drat!

    Broccoli salad or another marinated salad was my first thought -- lots of textural variety there that might complement very crunchy bacon! :)

      Make a broccoli salad. Chop up a head of broccoli into very small pieces, combine with 1/2 large red onion, finely chopped, 1 cup of currants, 1/2 pound bacon (cooked crisp and chopped) 1/2 cup nuts (I like pecans or cashews) chopped. Combine 1 cup Best Foods/Hellmann's mayonnaise with 2 Tbsp. red wine vinegar and 1/3 - 1/2 cup sugar (start small and add more to taste).
      Mix it all together, chill for a few hours.
      Chop by hand, don't use food processor
      Had it for dinner tonight - sorry, it's all gone.

      OR

      Use it in a nice quiche made with swiss cheese, bacon layered on the bottom along with some chopped baby spinach and pour on the egg batter. Yes .... real men do eat quiche.

        Crumble it and mix into a jar caesar dressing.Or make chili and use the bacon to add that special something.
