Vegetarian-friendly lunch spot near Mart Plaza?

Hi, I'm hoping Chicago Chowhounders can help!
I'm going to a conference and will be staying at the Holiday Inn Mart Plaza (Riverview).
I've been asked to find a lunch spot where I can take a client who is vegetarian but adventurous! I'm a bit of a foodie myself and chain-averse....
Can you recommend a place that's nice enough to take a client to (doesn't have to be fancy but a nice sit-down place) and that's in close walking distance of the Mart Plaza? And it can't be a multi-course place that takes 3 hours for lunch because we'd be going in between sessions at the conference.

Having worked in that area many of the restaurants around there will have vegetarian options - places I would recommend -
