When are my pickled asparagus ready to eat?

cleopatra999 Jun 9, 2012 03:30 PM

I made pickled asparagus for the first time today. My recipe (and many others I checked) does not say when they will be ready to eat. I found recipes that said everything from 5 days to 4 weeks, my friends who helped me said 6-8 weeks. We did not blanch the asparagus and they are whole. We processed them for 10 minutes (not in a pressurized cooker). I hope I don't have to wait 8 weeks for my Caeser garnish LOL!

should add, we are waiting the required 24 hrs without touching the jars after processing.

I'd wait at least two weeks. How many jars did you make? Can you sacrifice one to taste?
