Elk Burgers....condiments?

Have never eaten elk burgers, any condiment suggestions?

Pimiento cheese and sliced ripe tomatoes.

Did the caramelized onions with balsamic vinegar and blue cheese, a bit of mayo mixed with coarse mustard and hot sauce on good buns with a slice of tomato and some spinach - they were delicious!

We have elk here regularly. Something fruity goes very well, such as this blueberry ketchup. It is sublime with game. I just made yet another jar of it yesterday.

I second the caramelized onion suggestion. Have you tried ajvar? It is a roasted eggplant/red pepper/etc. condiment that is used in Central/Eastern Europe instead of ketchup. I prefer it, too. Bleu or goat's cheese are great with elk.

ETA: I forgot to mention fried capers.

Depends on the elk, but usually not as "gamey" as venison. I would do caramelized onions, bleu cheese... but everyone has their favorites.

We don't have elk in my part of the world but, assuming it tastes like most venison, then I'd be wanting a strong mustard and something sweet, like a redcurrant sauce/jelly
