Sounds like a job for Colonel Sanders.

Homemade breakfast burritos (make ahead, heat up before leaving home, wrap and insulate)
served still warm at first event. Or cold wraps, which can contain chicken salad or be vegetarian,
      for both events.

I'm a bit confused based on your description. First, at one church, someone else is taking care of meat. You're going to bring a side dish that, later, needs to move to another church and function as a meal?

What is the meat? And will you be able to warm anything at the second church?

I'm not sure I understand. Are you saying that you will be bringing the same dish to two separate potlucks? Are you arriving at the second church at 10 pm? Maybe you could rewrite your post with some punctuation so that it would be a little easier to understand what you are asking.
You could so a veggie cream cheese roll-up, cut into slices (pinwheels) and just leave a whole one for yourself to eat at the second church.

What about simple mini sandwiches that don't need mayo or dairy products? Less chance of spoilage with minimal refrigeration. Maybe something like mini pitas with hummus, taboule, and grilled chicken?

I like the sandwich idea: buy foil packets of condiments such as mustard or mayonnaise that people can apply themselves at the event(s)

There's not an issue of spoilage with jarred mayo, it's full of preservatives and no raw egg.
(and I am assuming you are responding to the OP)

I would make something like a quinoa/bean/roasted veg salad tossed in a vinaigrette. It should make it through the end of the day, and can easily stand in for a full meal. I would portion out your dinner separately and keep it in a cooler with freezer pack in the car.
