Smitten Kitchen's Pineapple Upside Down Cake?

Has anyone tried it ? How is it? Is it worth trying? I've been thinking about trying it but don't want to waste the supplies on it if its not very good! thanks

    OK. I bought a pineapple today because i won't have time saturday or friday. I plan on making it Saturday, around noon. Should i store @ Room temperature till then? Will the flavor be effected or should i just use the canned thats in my cabinet? Can i get the "unsweetened pineapple juice" straight from the pineapple?

      Store at room temp, do not use canned. There will not be enough juice in the pineapple, buy some.

        The recipe calls for 1/2 medium pineapple, peeled, quartered lengthwise, and cored
        so you can juice the other half with a blender or food processor and a strainer and get the juice you need for the recipe without buying canned or bottled juice.

        I love everything pineapple and SK's Pineapple Upside Down Cake is right up there with the rich, moist, gooey kinda of version I love. Don't use anything other than fresh diced pineapple and don't skip the rum step if you can tolerate it. Delicious at room temp and even better warm.

          Well i am baking for young teens. (10-13) How do children react to the taste of rum..? I've never used any alcohol in my baking. I've been told you can't taste it and it will just enhance the flavor. Any truth to this?

            Alcohol will bake out but the rum taste will remain. So, if you have concerns use rum extract or do w/out. Sorry, didn't see any mention of tweens in your OP. If they enjoy pineapple and coffee cake-ish desserts, it's a winner.

              Otherwise, a pineapple cake with cream cheese frosting or a pineapple bread would work too.

              I have just made the Best Recipe version of PUC, and it was fantastic -- without rum.
