Added egg white to my egg yolks - oops
What's the best way to fix this?
I separated six eggs and put six yolks into a bowl for creme anglaise. On the seventh I switched it round and the egg white went in the yolks instead of the yolk.
Can I compensate?
dirty another bowl and pull out the six yolks. It should be an easy task unless you broke the yolks.
When separating eggs, it is usually more important to keep yolks away from the whites than the other way around. The fat of the yolk inhibits whipping whites. But having some white with the yolks is rarely a problem. In fact it is impossible to have yolks without some white, since the white clings to the yolk.
