is there a way to make *whole wheat* bourekas?

craving bourekas, but would a wee bit healthier whole wheat version? Any ideas?

    puff pastry or phyllo.
    The point about gluten makes a lot of sense.

      IMO, while whole wheat is fine for bread, it does not work for pastry.

        I think Whole Foods may have whole wheat phyllo.

          These use phyllo dough, right? To make that thin and stretchy it needs gluten, which is stronger in white flour than whole wheat. White whole wheat is finer than regular whole wheat, and might make an acceptable phyllo. But I wouldn't count on it. I think you are better off focusing on the healthiness of the fat (brushed on the dough), and the filling.
