I just bought a bag of those little multicolored peppers from Costco. I would ordinarily grill them and use them in salads or stir fries, but I was wondering if anyone has come up with a good stuffing for these smaller dudes.
Mix Italian sausage, removed from casings, with some minced garlic and grated parmesan and crushed red pepper if you want heat. Stuff the peppers and put them on a sheet pan. Toss with olive oil and roast at 400 until peppers are tender and sausage is cooked. Takes about 15-20 minutes. Or, you can grill them. They are good appetizers or with crusty bread. Also fine at room temperature.
Martha Stewart has a recipe with slices of Spanish chorizo. I used the sliced deli meat version and just folded up the meat.
