Stuffed Eggplant similar to Don Peppe's in Ozone Park

I recently had the stuffed eggplant at Don Peppe and Oh, my gosh was it awesome. It was meatless, and I thought it was stuffed with homemade croutons?? I'd love to make it at home- anyone have an approximation of the recipe? Thanks!
