Cold Escarole Soup

Hey Guys,
I have AMAZING escarole from the farmers market but it's so unbelievable hot here and I want to do a chilled soup of some kind. Any ideas? I have good stock ready to go!

      Thank you! The cooking is fine, I just want to serve it cold. I tried a really simple one with just sauteed escarole and a couple cloves of spring garlic. I then pureed everything with some stock and chilled it. I served it with a drizzle of raw olive oil on top and a dash of sherry vinegar. Delicious! Thanks again.
