Ok, big soccer tourney this weekend. First game is at 10, next game isn't until 4. We are having a picnic potluck between games and I need a yummy side, and snack. Other people are bringing pasta salad, potato salad, chips, brownies, cookies, fruit etc... I'd like a side that's filling and delicious, but I don't feel like lugging two coolers around (it's supposed to be in the 80's and one will be stuffed with drinks.) 10 year old boys are supposed to be eating but they'll fill up on chips and desserts, so I'm not too concerned about pleasing them. Also if you have a nuticious snack that the boys would enjoy, that would be appreciated too. Was actually thinking about roasted chickpeas. I think they kind of taste like yummy corn nuts if done right. Any recipes?
Get a bread dough (or make your own), roll it out, spread it with ham and swiss or turkey and cheddar or pepperoni and mozzarella. Roll it up, place on a parchment seam side down (halve it if it's looking too thick). Let it read for 15 minutes or so and then bake. Slice and package. You can bring a dipping sauce if you want, but it'll still be great on its own.
I would take either watermelon to cut up there or carrots pita/crackers and hummus. The hummus will need to be in a cooler, but it won't take up much room. I know you said that others are bringing fruit, but in my experience most kids can't get enough watermelon and if it's a hot day it will help keep them hydrated.
