Taboo, dandelions are a slightly bitter green, so hard to avoid them being at least a little that way. If fact, that is their character - like chicory. younger/smaller leaves are less so...
We think dandelions are great with a warm bacon/dijon viniagrette, some garlic croutons, and either some seared scallops up top or a poached egg. A nice main dish salad.

I second that. Dandelion Greens are SUPPOSED to be bitter. That's their nature & their signature. The only way to enjoy them in their least bitter state is to harvest (or buy them) as young & tender as possible. The older & coarser the leaves; the more bitter they will be.
Another ploy is to mix them in with less bitter greens.
