What to do with leftover breaded, pan-fried chicken breast?

I made this a few days ago: http://food52.com/recipes/2805_herbed...

Is a green salad with the chicken chopped and added to it my only option for taking care of cleaning out the fridge and coming up with dinner tonight? My husband doesn't love main dish salads and I also would like to feed my preschooler with it. Any strokes of brilliance out there? --Thanks!

  1. Warm/crisp up the chicken in the oven. Boil some penne and toss with a little olive oil and some crumbled feta. Slice up the chicken and serve over the pasta.

    1. warm it up and put it on pasta with a little tomato sauce and some melted mozzarella -- quickie chicken Parmesan.

        1. Chop it up and add it to a veggie stir fry or fried rice at the very end so it gets warmed but not overcooked.

            Well, maybe this is not a stroke of brilliance, but does soup and sandwich sound like something that everyone at home can get on board with? I'd kill for that combo right now...gray and drizzly in NE today!

          2. you could turn into a pseudo- chicken marsala if you have mushrooms and marsala wine. i've done and served w/ rice and veggies. Its a hit. or, if you don't have marsala, you can just make a nice pan sauce w/ whatever you might have- chicken stock, white wine etc...

            1. Reporting back. Went with the pasta idea and warmed and sliced the chicken, sauteed a bit of garlic and a red and yellow tomato, added the kale and beet greens I had originally cooked with the chicken, and served over whole wheat spaghetti with parmesan. All of the aforementioned ate and seemed to enjoy it, and the 10-month-old even had it for dinner, too!
