Adding Flavour to a cake recipe
So I have a go-to cream cheese pound cake recipe and I was wondering how i should go about adding flavours to it? Most notably I would like to make a chocolate/vanilla marble variation. I know I need to add cocoa powder but should I also add more sugar to offset the bitterness? Or salt to bring out the flavour? My recipe is just cream cheese, butter, sugar, eggs, flour and vanilla. Thanks in advance!

If you just want it chocolate, substitute 1/4 to 1/3 cup of the flour with cocoa powder. If you use the dutch processed stuff, you shouldn't have to add sugar. Even if you didn't use the dutch processed, you wouldn't want to add much sugar... maybe a teaspoon .. maybe. You could do two different batters...one with cocoa and one without for a marbled cake. Just split the recipe in half. I assume your recipe calls for some baking soda because it has cream cheese in it. If your recipe calls for some combo of baking powder and baking soda use about 1/4 - 1/2 teaspoon less of the powder and use about 1/4 teaspoon more of the soda to compensate for the cocoa. With the dutch processed stuff, you may not have to compensate at all.
A pinch of salt is always good in baked goods.

I would mix up the batter, as is, with two cups of flour. Remove 1/4 batter and add just over 1/4 c cocoa. Add 3/4 cup flour to other part. Pour that into pan. Dollop chocolate mixture and drag knife through. You could change the ratio if you want more chocolate (eg for half chocolate, remove half batter and add 1/2 c cocoa, etc)

How much sugar do you have in the basic recipe? You probably will need more, but how much more depends on the amount of the other unsweetened ingredients.
