Corn Spinach Bell Pepper Feta Succotash?

We went to CPK yesterday for dinner (don't judge!). DH ordered their cedar plank salmon that came with a really good roasted corn, spinach, red bell pepper, and feta succotash. I could have eaten it as my entree, it was that good.

I'd love to be able to make something similar at home, but I'm not sure how to make the sauce/dressing for it. It wasn't too vinegary, or sweet. Any suggestions? I tried to google it, but only came up results relating to the CPK entree.

    Did they call it a 'succotash'? Sounds more like a corn salad. Usually succotash is a corn and lima bean vegetable dish, not with a 'dressing'.

      Yes, that's what it was called on the menu.

        OK, I found that menu listing. Clearly it's their own invention. With ingredients like feta cheese and cilantro, it sounds more like a salad. Was the spinach raw, wilted or cooked? The bell peppers?

        There are lots of corn salad recipes out there. Spinach and bell peppers are natural ingredients, providing contrasting textures and colors. To pin down the recipe any further you will have to decide on the nature of the sauce/dressing, especially whether it is more like a salad dressing or not.

      From where did you find CPK's Cedar Plank Salmon recipe? Were you successful in finding the Corn, Spinach, Bell Pepper, Feta Succotash recipe?

        I didn't find the Salmon recipe, but then again, that's not what I was looking for. I never did find the Succotash recipe.
