Going to Utah - need help!

We are headed to St. George, Springdale, Brice and Moab for 2 weeks. Any recommendation for good food of any kind would be appreciated. Especially interested in barbecue, Mexican, southwestern and coffee.

Your thoughts would be appreciated. Thanks in advance.

      In Springdale try The Mean Bean for coffee. They sell Ibis fair trade coffee and some pastries.
      Tasty! Oscar's, across the street, can be good for 'Mexican' but it's overpriced and not as good as it once was in my opinion. Zion Pizza&Noodle on the main drag as you head toward Zion has very good pizza, and they have good beer on tap. Stromboli too. Only open after 4pm I believe. In the little strip mall right outside the park there is a decent Thai place. Can't recall the name though.
