How long can I hold my Zuni Chicken?
I prepped my chicken Sunday night, planning on serving it tonight. Well, of course something came up, and we have plans for tomorrow. Will it hold til Thursday night?
What size bird did you use? The recipe is designed around a fairly small bird (2.75-3.5 lbs) as supermarket birds tend to go these days, and specifies it can be prepped 1-3 days ahead. Because the flesh gets salted in advance, with each passing day the outermost layers of flesh will behave like they are being salt-cured, so it's a matter of size and time.

It's a bit over three. I make the dish fairly regularly. Her salting section said if you hold things another day or so, it really won't matter, but the thing will have sat in the fridge four days by the time I get to it. It's still within it's date, so I will give it a whirl. I'll report back.
