mixing potato varieties

Is it okay to mix varieties? I ended up with some extra Yukon Gold potatoes and red potatoes. Would it be okay to throw them all in the pot? I'm thinking of using them for mashed potatoes or possibly a potato tortilla. I figure the potatoes may have different cooking times and textures, but this is just for everyday eating, nothing fancy.

steam or boil the potatoes. when a knife pierces easily, drain them from the pan, reserving a bit of the cooking liquid. smash them with a masher. season with salt and pepper. i leave them kinda chunky, but you can add some cooking water for a softer texture.

pre-heat the broiler. take a big spoon and blob the mashed potatoes in rounds on a cookie sheet. top with butter, olive oil or cheese and run under the broiler till tops get golden brown. big hit with peeps and very easy.

Red potatoes don't mash very well as they are more of a waxy potato but I would think you could do it. Roasting them would certainly work. Frying them together would work too.

Thanks. Sounds as if I should go the tortilla route ...
