Razor clam ideas

Just impulse bought a pound of fresh east coast razor clams. Pan fried them last time. Any other good quick ideas? They're on the menu for tonight once I stop binging on soft shell crabs.

  1. I like James Beard's clam fritters with Pacific razors. It should be about the same with Eastern razors.

    1. Chowder, although it might not be worth it if you only have one pound.
      Maybe a pasta? You could cook them like steamers with whatever flavorings and aromatics.
      The fritters mentioned above sound great..

      1. When I was a kid we used to get Pacific razor clams. We would dredge them in well seasoned flour and put them in a very hot pan with a good amount of oil. They only take a minute or two per side to cook.

        1. To combine elements of the first two posts---fine suggestions both: James Beard's Oregon razor clam chowder.

          1. I like them the way they are served at my favorite Chinese restaurant......in Black Bean Sauce.

            1. Scrub them and throw them on the grill. Eat them when they open -- add a squeeze of lemon if you really feel the need.

              They're hard to find and wonderfully delicious when you do -- do mess with 'em!
